Ingredients You’ll Need
Here’s what you’ll need to whip up these delicious pancakes:
Milk: I’m using unsweetened almond milk, but feel free to use dairy milk or any milk alternative you have at home.
Eggs: These act as a binding ingredient, giving the pancakes that moist, cakey texture we all love.
Banana: Use a large banana with brown spots for natural sweetness. Pro tip: If you have overripe bananas in your freezer (perfect for smoothies), they work great here too!
Old-Fashioned Oats: I love the larger flakes of old-fashioned oats, but quick or instant oats will work just fine.
Baking Powder: Essential for fluffy pancakes—no one wants flat, hockey-puck pancakes!
Salt: Just a pinch to activate the baking powder and enhance the flavors.

How to Make Banana Oatmeal Pancakes
The beauty of this recipe is how simple it is—everything goes into the blender! Here’s the step-by-step:
Blend the Ingredients:
Start by adding the liquid ingredients to the blender: pour in the milk first, then add the eggs.
Next, toss in the banana, followed by the oats, baking powder, and a pinch of salt.
Secure the lid and blend on low speed (or use the smoothie setting if your blender has one) for about 40 seconds, until the banana is fully combined and no large oat flakes remain. You’re aiming for a smooth, pourable batter.
Prep Your Griddle:
I’m using an electric griddle set to medium-high heat (about 325–350°F) to cook multiple pancakes at once. You can use a stovetop pan if that’s what you have.
Grease the griddle with a stick of butter or a quick spray of cooking spray. If you’re keeping it dairy-free, use a nut butter or your preferred spray.
Cook the Pancakes:
Use a measuring scoop (or pour directly from the blender) to portion the batter onto the griddle. Aim for small to medium pancakes for even cooking.
Cook until the edges are set and defined, about 1–2 minutes. You’ll see the batter start to cook around the edges—that’s your cue to flip!
Flip the pancakes and cook for another minute or so until golden brown. The air pockets from blending the oats and banana give these pancakes a hearty, muffin-like texture.
Serve and Enjoy:
Stack those pancakes high and serve them warm. They’re naturally gluten-free since oats are used instead of flour, and you can easily make them dairy-free by using a milk alternative and dairy-free grease for the griddle.
